Ayala Tasting Notes
As the House's "flagship" , it has to be regular and consistent from one year to the next. This champagne is a non-vintage and is a blend of 2/3 red grapes (pinot noir and pinot meunier) and 1/3 white grapes (chardonnay). It is given a minimum of two and a half years of aging.
