Hourglass Tasting Notes
The stylistic goal of Hourglass is to achieve a seamless balance of fruit concentration with the elegance of more subtle nuances driven by its terrior. Drawing from its Napa Valley origin, Hourglass has a forward depth of fruit, yet is not a "fruit bomb." Saturated mid-palate texture is again balanced by lively acidity, which rolls into a refined finish. Moderately high alcohol is balanced against integrated sweet oak, and depth of fruit. Aromatics play as important a role as texture, or flavor. Nuances of black licorice, mint, eucalyptus, earth, coffee/toffee, crème-de-cassis, and pomegranate, blend back and forth between aroma, and taste.

Wine Spectator
Pushes ripeness to blackberry and black cherry pie flavors while retaining a delicate balance and tight focus. Full-bodied, polished and elegant, streamlined, riveting and most complex on the finish. Best from 2011 through 2018. 500 cases made. —James Laube, 92 points

Wine Advocate
Hourglass's flagship wine, the 2007 Cabernet Sauvignon is one of their strongest efforts to date. An inky/purple color is followed by subtle scents of barbecue smoke, black currants, black cherries, licorice, and a hint of oak. Full-bodied, generously endowed, and deep with loads of concentration, purity, and texture, it is approachable now, but should evolve for 20-25 years. —Robert Parker, 93 points
