The secret is the location, which is not only quite breathtaking, but also ideal for ripening grapes. The vines are planted all over the estate, wherever the slopes catch the full benefit of the long hours of sun. Combined with the chalky white soil, which reflects light back to the vines, the result is a series of sun-traps that form a unique microclimate. Grapes are selectively picked at optimum levels of ripeness, and cool-vinified to preserve aroma and fruit. The fortification is more subtle than in days gone by - just enough to arrest fermentation - and the wine is kept away from oak and bottled early for freshness and delicacy. The result is simply delicious, great on its own or with foie gras, melon, fruit tart or even blue cheese.
