The 2000 Brut Cuvee Elisabeth Salmon is refined and elegant, with lovely depth and richness in its fragrant fruit. The 2000 Elisabeth Salmon is weightier than the NV Brut Rose yet everything is simply in the right place. This is a gorgeous, wonderfully expressive Champagne from Billercart-Salmon that is even more impressive than it was last year. The 2000 Cuvee Elisabeth Salmon is 50% Chardonnay and 50% Pinot Noir, of which 10% is still Pinot juice. Roughly 10% of the wine was aged in cask, and the wine was bottled with 9 grams of dosage.
